Yummy Ass Zucchini Cakes

 

I found this recipe along with this photo on Pioneer Woman.com. It's so yummy and simple too.....which let's be honest are two key thing that draw me to recipe in the first place.

You gonna need

One nice big Zucchini schredded and then rang out in a cheese cloth or towel to get the extra water to release...you can use your cheese shredder it works perfectly and any kitchen towel you choose
1 tblsp Minced Garlic (or as i like to do add in as much as you darn well please), an Italian Cheese Blend, an Egg
bread crumbs (you can get so many different types of bread crumbs now you pick out a kind you really enjoy. I use an Itallian mix.)
1/2 cup 4-Cheese Italian blend
olive oil this is for the frying so use to taste
salt, and some fresh ground pepper again this is to taste there are no rules on this one.

Mix together the zucchini, garlic, bread crumbs, and cheese in bowl mixing well.
Then toss in your egg and salt and pepper and mix some more. You want an almost pasty type of mixure so if you feel you need another egg agg one.

Heat your olive oil up on a skillet nice and hot and add drop in a tablespoon at a time the zucchini mixture pressing them flat as you go. As they start to brown flip them over and cook over side....this happens fast.

These make the best side to a BBQ dinner or even for just some simple snacking. I LOVE THEM!!!!
